Tandoori Chicken

The name itself makes my mouth water. Tandoori Chicken is one of my family’s favourite homemade dishes whether it’s cricket match season or when we’re just craving a hotel quality dish. This dish is so simple to make although it may be a little time consuming but friends, let me warn you- this dish is a real big treat in the end!

So, what are we waiting for…Let’s get started!

To begin, this dish will require 2 marinations separately. These are the ingredients for the first marination.

Ingredients: 1st Marination
1) 4 pieces of chicken drumsticks
2) Juice of 1 and 1/2 lemon. (3-4TBS)
3) 2 TSP ginger garlic paste
4) Mustard oil
5) A pinch of Black Salt

Before you marinate the chicken, just be sure to make 4 slits on each drumstick so that the insides of the chicken will taste just as good! Next, mix well with the lemon juice and mustard oil. Mix in the other few ingredients. Continue to marinate your chicken by  popping it into the fridge for the next 40-60 minutes.

On to marination number two: not so hard, right? 

Second Marination:
1) 1 Small bowl of Yoghurt (Hung curd)
2) 1 and 1/2 TSP Ginger Garlic Paste
3) 2 TSP of Red Chilli Powder (Diggi Mirch)
4) 1/2 TSP Kashmiri Chilli
5) 2 TSP of Cumin and Coriander powder
6) 1 TSP Chaat masala
7) 1/2 Garam masala
8) 2 TBS Cashew paste
9) 1/2 TSP Gram flour
10) 2 TSP Mustard oil
11) Pinch of Tandoori food colouring
12) Half Tsp of Ajwain (Carom) and Mustard Seeds powder
13) Few TBS of melted butter for basting

Now, mix all the ingredients in a bowl. Everyone has a different preference, if you think your seasonings needs a little more or a little less of something, you can change it accordingly. Your marination should taste spicy and tangy. It also must have an orange-y color.

After you have completed your marination, remove your chicken drumsticks from the fridge. Make sure to squeeze your chicken well to remove any additional water. Add your drumsticks to your second marination. Cover this with a cloth or foil wrap and pop it back into the fridge for 6-8 hours for further marination. (overnight marination is the best). Yes friends, this dish definitely teaches you patience. Just few more hours of waiting! 

Method for grilling:  (Preheat oven to 250º degrees celcius.) 
After your chicken has been marinated, remove your marinated batter and keep the drumsticks under the grill or in oven. Bask the chicken and cook it for around 20-25 minutes.

Make sure to butter each piece with a brush after every 10 minutes and while doing so, turn sides to avoid burning.

You are done…well, almost. Celebrate your food! Love it, garnish it and then…eat it! Garnishing my dish is always the cherry on the top. Food that looks nice just makes my tummy rumble a little more.

For garnishing:
1. 2-3 Lemon wedges
2. A few Podina leaves
3. A squeeze of lime juice
4. A TSP of Chaat masala
5. Silver foil

Wrap the ends of each drumstick with a silver foil. Now just lay all your pieces on a preferred plate and decorate with the lemon wedges, podina leaves, chaat masala
