Pesto Pasta

It’s not every weekend that we get to pop by to an Italian restaurant and devour some delicious Pesto Pasta. Sometimes we’re busy, sometimes we’re a little lazy to get dressed but friends, don’t hush away those cravings because you can satisfy them right here in your own kitchen.

When I see Pesto pasta that has been prepared with store bought pesto, a part of me gets sad. The ingredients are not fresh and it could never possibly replicate what a homemade pesto dish could offer.

So friends, this is my recipe for a delicious Pesto Pasta dish, with a little twist in my sauce. And of course, like most of my dishes- this one is very simple!

Here is what you’ll need:
Pesto:
– A packet of Basil Leaves: handful to be exact
– 1 and 1/2 TBSP of Pine nuts
– 4 TBSP of Olive Oil
– 30 Grams of Italian Parsley
– 1/2 TSP Lemon Zest
– 2 TBS of Parmesan Cheese
– Salt and Pepper to taste

See..with only 7 ingredients that are readily available in your kitchen- you are already half way done with preparing a scrumptious dish.

Make sure to roast your pine nuts for a quick minute on a skillet in a little olive oil until they develop a light brown color. Be very careful not to burn! Grind all your ingredients together in a little mixer until a smooth paste is formed. Taste to see if you need additional seasonings.

For this recipe; I like to use simple spaghetti but any other type of pasta works great too. Make sure to boil your pasta and drain!

Take a pan and add 2 TBS of Olive oil. Add 10-12 pieces of chopped Garlic. Sautée for around 2 minutes. Add 2 TSP of Pine nuts. Add broccoli and asparagus- or vegetables of your choice. Now, here comes a twist. Add 1/2 a cube of Vegetable Stock- you don’t need to add any water! Just trust me on this one..This brings out a beautiful Aroma. It will automatically be absorbed in the water released by the vegetables.

Add your sauce to your vegetables. Continue to sautée. Add your pasta and mix well! Add any extra seasonings such as salt, pepper or even Italian herbs. If you find that your pasta is becoming a little dry, only if needed, add a little olive oil!

Mix well. Voila..Another quick dish waiting to be served. Transfer to a plate of your preference. Garnish with fresh basil leaves, chopped cherry tomatoes (halves) and lastly, what is greater than pesto- more grated parmigianino cheese!!
