Avocado Pesto Zoodles

Zoodles  are Zucchini noodles and are considered to be a much healthier alternative to pasta. This recipe is so delicious and easy to make- and perhaps, a fun way to have the kids help you out in the kitchen.


  1. 2  Zucchini
  2. 3 tsp butter
  3. 1 tsp pine nuts
  4. 1/4 cup freshly grated Parmesan cheese
  5. 3 tbs Basil avocado pesto sauce
  6. Salt and black pepper, to taste
  7. 4 -5 cherry tomatoes (halves)
  8. Lightly roasted almond flakes for garnishing

Basil-Avocado Sauce: 

  1. 1 Avocado
  2. 1 tsp Lemon Juice
  3. 2 TBS olive oil
  4. 1/4 lemon zest
  5. 1 cup Italian Basil
  6. 3 Garlic cloves
  7. 2 tsp pine nuts

Let’s begin: 

Making Zoodles is pretty easy if you have a spiralizer. You can also make zoodles by peeling however, this may be time consuming and a spiralizer will produce finer zuccihini noodles.

For the sauce, combine the avocado,  Italian Basil, pine nuts, garlic, lemon zest, parmesan cheese in a food processor or blender. Allow the food processor to run and slowly pour in the 1tsp lemon juice, olive oil, salt & pepper to taste. Keep the food processor running until a thick paste begins to form.


Next, heat the sauce pan. Add some butter and lightly roast some pine nuts. Be careful not to burn them!


Then, add some pesto sauce. Stir this for around 2-3 minutes. Add your zucchini noodles. Continue stirring for another 2-3 minutes and then, add salt & pepper.


Since zucchini is made up of 95% water- don’t cook these noodles for too much time as it will result in a soggy or mushy texture! Don’t let your hard work go to waste- keep your eye on these noodles! You are not trying to ‘cook’ these noodles the same way you cook normal noodles.

Garnish your dish with some cherry tomatoes and almond flakes.
