Vietnamese Spring Rolls

Whenever I saw a plate of fresh Vietnamese spring rolls, I always imagined the process to be somewhat difficult but today, making these spring rolls myself proved that this was just as simple as 1-2-3 !

This was my first time making Vietnamese spring rolls and I promise you, it certainly is not going to be my last. These rolls are so easy to make and so so delicious,  I just had to prepare another batch.

Here are the ingredients:

Ingredients: 

1. 1/2 packet of rice vermicelli.

2. 8-10 rice wrappers

3. 1 cup cooked shrimp – peeled and deveined

4. 1 cup boiled chicken or a thin omelette (See picture below) 

5.  few fresh mint leaves.

6. 1 cup shredded carrots , red cabbage, radish, 8-10 leaves lettuce,

2 eggs + 1 tsp cornstarch for the thin omelette 

Procedure :

Start by softening the rice papers. ( you can use water mist to moist the paper)

Arrange salad leaves at the bottom of the rice paper, then add the veggies as per your choice then about 4 shrimp halves or chicken. 

Now the rolling part.:

Prepare the sauce:

Peanut sauce: First , heat the pan and then add 1 tsp oil. Next, add 1/2 of a Medium onion that is finely chopped. Sauté for 2-3 mins. Then, add 2tbs of Hosin sauce and mix with the onions. Next, stir it for around 2 mins. Add some water to this and boil for another 2 mins. Now, add 1tbs of peanut butter (creamy) and some crushed groundnuts. Your Sauce is now ready to be served. 

Serve your homemade spring rolls with the sauce and enjoy!
