As a vegetarian, finding new ways to make my daily meals more exciting can be quite a challenge. However, I’ve got a new salad for you that is not only delicious but very easy to make.
1. 1 cup boiled quinoa
2. 7-8 Brussels sprouts thinly sliced
3. 1 Meyer lemon
4. 1/2 tsp chilli flakes
5. 1/4 tsp crushed pepper
6. 2 tsp lightly toasted walnuts chopped or crushed
For the dressing:
1. One Meyer lemon juice
2. 2-3 tbs virgin olive oil
3. 1/2 tsp honey (optional)
4. Salt to taste
First, boil the quinoa. Drain and keep it aside. Then, wash the Brussels sprouts. Slice thinly with a V slicer. Next, peel the lemon and then cut the zest into long and thin slices.
Using the same peeled lemon for juice, add 2-3 tbs of olive oil, salt & pepper and whisk nicely and keep a side.
Now, take a bowl- add Quinoa, Brussels sprouts,lemon zest, mix well. Next, Add chilli flakes, chopped walnuts and salad dressing. Continue to mix well. If you need to add any extra seasonings, you can adjust accordingly to your taste.
Your healthy crunchy salad is now ready to be served! Easy, wasn’t it?
