Simple, delicious and hearty! This is a classic recipe and is so easy to make- I can’t wait to share my version of this dish with you guys.
Here’s what you’ll need:
1. 3 large leeks (1 bunch)
2. 2 Tbsp butter
3. 4 cups vegetable stock
4. 2 potatoes (Russet), peeled, diced into small pieces.
5. Half white onion (chopped)
6. 2-3 garlic cloves (chopped )
7. 2 tsp fresh cream
8. 1/4 tsp black pepper
9. Salt to taste
First, clean and cut the leeks in thin slices.
Next, melt some butter on medium heat in a heavy thick-bottomed pan. Add the chopped garlic and sauté.
Continue to sauté as you add your white onions and chopped leeks.
Stir altogether nicely. Cover the pot and lower the heat, let this cook for 10 minutes until the leeks have softened.
Next, add some vegetable stock, potatoes, herbs and salt. Allow the dish to simmer and then cook for 20 minutes until the potatoes are cooked through.
Purée the soup and adjust the seasonings accordingly to your preference.
I like to add some more herbs and cream as this just adds so much flavour. Cook the soup for just a few more minutes and finally, sprinkle some freshly ground pepper!
