Bharwan Bhindi

Today, I’ll be sharing a family favourite recipe with you guys: Bharwan Bhindi! In this dish, Bhindi or Okra is stuffed with different spices and is sautéed with baby onions. It’s shallow fried and spicy and so delicious !

A quick tip: Buy small sized and tender Okra- it makes a huge difference, I promise you!

 

Here’s what you’ll need:  

1)  Ladiesfingers/Okra(bhindi)  500 grams  (Small ones)
2)  Coriander powder 2 tbs
3)  Cumin powder 1 tbs
4)  Red Chilli 1 tbs
5)  Dry mango powder (amchur) 1tbs
6)  Chat masala 1/2 tbs
7)  Turmeric powder 1/2 tsp
8)  Salt to taste
9)  2 small green chillies (slit)
10)  1 tsp chopped garlic
11)  1/2 tsp ginger (fine julienne)
12)  1/2 tsp Cumin seeds
11) Oil 3 tbs
12)  10-12 baby onions (madras onions)
13) 1 tsp kasturi methi (optional)

Instructions:
Clean, wash and wipe ladies fingers until absolutely dry. Remove the upper part and ends. Slit and keep aside.

Stuffing masalas:
Mix red chilli powder, coriander powder, cumin powder, dry mango powder, chat masala turmeric powder and salt. Stuff the ladies finger with this masala. Keep the left-over masala separately.

Heat oil in a thick bottomed pan. Add Cumin seeds. Once the seeds begin to crackle, add chopped ginger, garlic and Chilli. Sauté for two minutes. Next, add the stuffed ladies fingers and stir nicely. Add the left over masalas on top and cover the pan let it cook for 3-5 mins. Lastly, add baby onions and toss the vegetable nicely. Add some salt to taste.

Cook covered on low heat until the lady fingers are fully cooked and tender. Now remove the lid and add the lightly roasted kasturi methi to make it more tasty.

Serve hot with some chapati’s or rice.
