Grilled Halloumi and Zataar zucchini with chunky hummus

This recipe is for all my fellow cheese lovers. What sounds better than a nice platter of grilled hallomi cheese on a meatless monday night?

Mixed in with some hummus, grilled zucchini and Zatar- I promise you, this is a dish to binge on !

Here’s what you’ll need:

1. 1 zucchini, finely sliced
2. 150 gms Halloumi  sliced
3. 1tbs olive oil
4. 1 tbs zatar powder
5. 1/4 tsp Chilli flakes
6. Salt to taste
7. Mixed seeds 1 tsp
8. 4-5 tbs hummus

Recipe for Hummus:
1. 1 can 200gms Garbanzo beans drained, rinsed
2. 1 tbs lime juice
3. 1 tsp yogurt
4. 3-4 cloves garlic
5. 1/4 tsp black pepper
6. 2 tbs tahini
7. 2 tbs olive oil
8. Salt to taste

Put all of the above into your food processor. Add more oil or water for your desired consistency. My tip would be to keep the consistency coarse.

Start off by preheating your oven to 180°C. Line a baking tray or pan with baking paper and arrange the sliced Zucchini nicely.  Drizzle with 1 tbsp of olive oil and season generously with zataar, chilli flakes and a pinch of salt to taste. Allow this to roast in the oven for around 20 minutes.


Now, on Med.high heat, fry the Halloumi strips until they are lightly browned on both sides.


Spread the chunky hummus on a flat dish, add the grilled zucchini and Halloumi  on top.


Garnish with some mix seeds and some parsley leaves.


That’s it! Your delicious, healthy and full of protein salad is ready to serve!
