Nothing makes me more nostalgic than attempting old recipes!

Phirni is one of my all time favourite Indian desserts to prepare- it’s sweet, delicious and very refreshing! It is perfect for a hot, summer day. Phirni is a simple rice pudding that is often prepared for festive occasions such as Diwali.

You guys must give this recipe a try…it is very easy to make and I promise you, the end result is very rewarding!

Here’s what you’ll need:
1) 1 ltr. full cream milk
2) 325 gms sugar
3) 2 tsp rose water or 1tsp rose Essence
4) 1tsp cardamom powder
5) 1/4 cup of soaked basmati rice

For garnishing:
1) Chopped pistachios
2) Rose petals


Start off by bringing a litre of milk to a boil in a heavy bottomed vessel. Boil on simmer until it reduces to 3/4th the size.

While the milk is simmering, drain 1/4 cup of soaked basmati rice and grind to a fine paste and set aside.

After the milk has reduced, slowly add the ground rice mixture and keep on stirring until it blends well into the milk.

Make sure you keep on stirring so that the rice doesn’t stick to the bottom. Add sugar as per above quantity. Continue to stir and let it cook until it thickens and forms a nice creamy mixture with no lumps.

Add 2 tsp of rose water or 1 tsp of rose essence and 1 tsp of cardamom powder.

Finally, turn off the flame and allow your mixture to cool. Keep it in the fridge for around 1-2 hours and serving chill in clay pots.


Transfer to a serving bowl and garnish with rose Petals and chopped pistachios.
