Thai Papaya Salad

There is nothing like a juicy, refreshing salad in the middle of summer. My go to summer dish has always been a Thai papaya salad. It’s healthy, delicious and has a sweet and spicy taste which adds a nice zing to the dish!

Here’s what you’ll need:

1. 1/2 large green raw papaya
2. 2 -3 big cloves garlic,
3. 1-2 tbs dry-roasted salted peanuts for garnish
4. 2 fresh bird chilies finely chopped
5. 1 tsp either Brown or palm sugar
6. 2 tbs fresh lime juice
7. 1-2 tbs fish sauce
8. 2 plum tomatoes, coarsely chopped
9. 5-6 long beans or French beans (trimmed and cut into Julianne style)
10. 1 medium green raw papaya (4 cups)
11. Few Thai basil leaves
12. Salt to taste

You can also add: 1 tablespoon dried shrimp (optional)however, if you want to make this salad strictly vegetarian, you can avoid this and fish sauce altogether! You can use light soya sauce as a substitute.

Peel and discard seeds and inner skin. Using a mandoline, julienne the flesh – around 4 cups of big half size papaya. Keep this aside.

In a blender or mortar, blend or pound garlic, salt, chilies, sugar into a paste. Transfer to a large bowl and mix in lime juice and fish sauce. Use a mortar to lightly crush tomatoes and beans. Next, add this to a bowl and mix lightly.

Add papaya to the bowl and lightly but thoroughly toss together. Adjust the seasoning. Transfer into a serving dish and sprinkle with crushed peanuts and freshly chopped basil leaves. Your dish is ready to be served.
