Ever wondered what a healthy Indian pancake would taste like? Well, put the sugar and milk away because, this recipe calls for spices and grains! Thalipeeth is a spiced savoury pancake – from Maharashtra – that is delicious, healthy and will keep you begging for seconds.
Here’s what you’ll need:
Ingredients:
- 2 cups thalipeeth Bhajni flour (I used ready made)
- 2 big onions Med.chopped
- 1 chilli finely chopped
- 2-3 garlic cloves pounded
- 2 tbs chopped coriander
- 1tsp sesame seeds
- 1 tsp ajwain
- 1/2 tsp turmeric
- 1 1/2 tsp chilli powder
- 2 tsp dhania jeera powder
- 3/4 tsp garam masala
- Salt to taste
- 2 tbs oil
- Lukewarm water
Thalipeeth bhajni:
- 500g bajra (pearl Millet)
- 500g Jowar (sorghum)
- 500g rice
- 250g chanadal (gram dal)
- 1 bowl urad dal
- 1/2 bowl moong dal
- 1 bowl coriander seeds
- 1/2 bowl cumin seeds
- 1 tsp methi
Dry roast all the grain and pulses one by one until they change their color lightly and turns little fragrant.
Mix everything together and grind it
First chop the onions then add salt,chilli coriander,garlic and mix it nicely by crushing onions with your hands for few minutes. This will help to make the mixture more flavourful.
Add all the maslas, ajwain, sesame seeds, oil and then add the bhajni flour.
Start adding like warm water little by little and mix it nicely to form a dough.
Once the dough is ready keep aside.
Take the fry pans or flat iron skillets and apply 1 tsp of oil .Take a ball sized dough and pat it evenly with your hands to a medium round disk shape.
Wet your hands in between with water to ease the patting. Make 1-3 holes on the thalipeeth so that they get cooked uniformly and so that the oil is absorbed evenly.
Then flip the thalipeeth and cook until crispy. Cook on medium heat.
Your healthy, delicious thalipeeth is ready to be served with some raw mango coconut chutney, ketchup and homemade butter.
