While we most commonly associate a good Pesto sauce with some pasta, Pesto can truly be the star of any dish when made just right. This versatile sauce can be used as a dip, salad dressing, a spread or even on your pizza. The possibilities are endless.
So, here’s what you’ll need for my fool-proof recipe. Say goodbye to store bought pesto sauces!
Ingredients:
- 1 cup fresh basil leaves
- 1 cup fresh Italian parsley leaves
- 1 lime juice
- 3-4 cloves of garlic peeled
- 1/2 tsp lemon zest
- 1/4 cup of lightly roasted pine nuts
- 1/4 cup freshly grated Parmesan
- 1/2 cup good quality of olive oil
- 1/2 tsp freshly ground pepper
- Kosher salt to taste
Method:
To make the pesto, combine all of the above into a food processor jar. With the motor running, slowly add olive oil in a slow stream until a smooth yet coarse texture is formed. Make sure your sauce isn’t runny nor too thick – it should be a perfect balance in between.
Next, scrape down the sides of the bowl as needed – and that’s it! If you don’t plan on using your sauce just yet, simply store into a refrigerator.
